What is Giling Basah?
The process begins with ripe cherries, which are pulped to remove their outer skin. Unlike conventional methods, Giling Basah then incorporates a shortened fermentation period to loosen the sticky mucilage. The beans are washed and immediately hulled while still wet—removing the parchment layer before the beans are fully dried. This step is unique to Indonesian processing and ensures that the coffee beans dry much faster, making it particularly effective in the region’s high-humidity conditions.
As the beans continue to dry, they take on a distinctive blue-green hue and develop their signature flavor profile. Giling Basah enhances the coffee’s natural earthiness and body, producing a cup with bold, rustic notes of cedar and tobacco, balanced by the sweetness of rich chocolate and subtle hints of spice.
