This coffee shines best from a lighter medium roast to as dark as you prefer. Compared to previous seasons, it’s cleaner in taste with slightly less fruitiness but still maintains the signature complexity of a honey-processed coffee.
A lighter roast highlights bright citrus, floral, and soft fruit notes, with a unique oak/peat-like finish. It’s sweet and layered but requires careful roasting to avoid underdevelopment.
Our favorite roast level is medium, where the coffee remains balanced and complex, introducing the rich chocolate and smoky undertones that Dominican coffees are known for. These flavors complement the more exotic fruity and citrus notes, creating a well-rounded cup.
For those who enjoy a darker roast, this coffee develops a more complex depth than its washed counterpart, though it may not be as smooth and rich. However, it still delivers a bold, full-bodied experience for those who prefer a deep, intense flavor.

What is Red Honey Processing?
Honey processing refers to the method of leaving some of the coffee cherry’s mucilage (the sticky fruit layer) on the beans during drying. In red honey processing, a significant portion of this mucilage remains, giving the coffee a deeper sweetness and a richer body. This method bridges the gap between the bright acidity of washed coffees and the heavy, syrupy characteristics of natural-processed coffees. The result is a smooth, complex cup with layers of sweetness, fruitiness, and balanced acidity.
